Three Michelin stars of bliss. This is a tiny 6 seater counter style sushi bar. It is hidden in the car park of the building across the road from the heavily fortified US embassy so it can be a little bit of a trick to find. Luckily we had the foresight to get the hotel receptionist to make a reservation for us this afternoon because Saito was turning people away.
This is probably the last sushi place we'll get to in Tokyo and what a way to go out. We got all our old favourites - the toro, the sea urchin roe, the eel, the bonito, the sardine, abalone and moon fish liver or fish foie gras. Toro is the fatty belly part of the tuna makes up the smallest proportion of the tuna so it is quite rare and expensive. But it is oh so tasty. It is a very light pink. Toro is also broken up into two categories - o-toro and chu-toro. Chu-toro is delicious and fatty but o-toro is so fatty it will melt in your mouth.
