Curing ocean trout after midnight... the magic happens overnight



Once the magic has happened you can make things like Cured Ocean Trout and Lemon Creme Fraiche Baguette or Cured Ocean Trout with Remoulade and Dill Vinaigrette or even Cured Ocean Trout Carpaccio. Thanks Michelle.
